Raw almond coconut amazeballs

RAW / GF / V / SF

Ingredients:

Pulp from almond milk, recipe here

3 Tbsp coconut oil

1 large handful desiccated coconut

2-3 Tbsp raw agave syrup (varying based on how sweet you’d like them)

1 large handful flax seeds

2 large Tbsp natural crunchy peanut butter (or smooth),

Creating (no cooking, they’re raw!):

Add coconut oil into a small glass, boil some water, place boiling water into a small bowl, and then submerge the glass with the coconut oil, into the bowl. This will have melted down to a liquid by the time we need to add it to our mix.

Take a large bowl, and break down the left over almond pulp into a fine consistency, add desiccated coconut, flaxseeds, mix all together. Then add 2 large tables spoons of crunchy natural peanut butter and mix all together, This is a bit messy, but ensure you mix it all in together so that it isn’t too lumpy.

Add 2-3 table spoons of raw agave syrup and the melted coconut oil, mix all in together. The mix should feel moist!

Roll the mix into golf ball sized balls, roll in remaining desiccated coconut for texture and place into a sealable container.

Your balls are now ready to eat, and enjoy!
